As a Nutritionist I frequently get asked about the benefits of yoghurt. While it is a personal choice to include or omit dairy from your diet. I fully support the choice to include yoghurt. Not only it is a great source of calcium, but is also rich in probiotics. I recommend choosing a greek or natural yoghurt and adding the flavours yourself. This lowers the level of natural (and added sugars) in the yoghurt!
These addition of yoghurt to these hotcakes not only boost it nutritional benefit, but also creates a fluffy light texture!
Savoury Zucchini and Yoghurt Hotcakes (serves 4)
2 cups almond meal
2tsp baking powder
1 clove garlic, crushed
2 tsp chilli flakes
1 large zucchini, grated
½ cup green peas
1tbsp olive oil
Combine almond meal, egg, yoghurt and baking powder in a bowl. Then mix in garlic, chilli flakes, zucchini and green peas. Heat oil in a frying pan. Then spoon ¼ cup of mixture into the pan and flatten it out. Cook hot cake for 3 mins on either side, or until golden brown, repeat with remaining mixture.
