Tofu and Edamame Stir fry

300g firm Tofu

2 cloves garlic, crushed

1 cm ginger, finely grated

1 long red chilli, finally chopped

2 tbsp soy sauce

1 tbsp fish sauce

1 tbsp honey

1/2 large Brown Onion

150g mixed mushrooms

1 large Zucchini 

300g edamame (fresh or frozen)

1tbsp olive oil

Rice or Noodles to serve...


Slice Tofu into 1cm strips and place it in a bowl. Add the garlic, ginger, chilli, soy sauce, fish sauce and honey to the bowl and mix to coat the tofu. Allow to marinate for 10mins.

Prepare the mushrooms by thinly slicing them, set aside. Roughly chop the onion into 1cm pieces. Slice the zucchini in to chips. Then prepare the edamame. Steam edamame for 5-10min. Remove the beans from the casing. 

Heat oil in a large wok or heavy base fry pan. Cook onion for 2min or until it begins to soften. Add in mushrooms and Tofu and cook for 3mins until mushrooms begin to wilt. Toss through Zucchini and edamame beans and remove the wok from the heat. Serve with a side of Brown rice or noodles.
