I am always looking for the perfect lunch to pack for uni, or a quick snack to grab on the go.... This slice encompasses all of that! Filled with all the good stuff making it both delicious and nutritious - oh and dead easy to make!

Sweet potato and lentil slice

1 medium sweet potato (~300g)

1 large carrot (~100g)

200g cooked brown lentils

1 cup wholemeal flour (replace with Gluten free flour for intolerances)

1 tsp baking powder

1 tsp ground cumin

2 tsp dried basil

1 tsp chilli flakes

4 eggs

Β½ cup milk

ΒΌ cup grated parmesan chees

Method:

Grate the sweet potato and carrot into a large mixing bowl. Then add in flour, lentils, baking powder, cumin, basil and chilli flakes, stirring to coat the vegetables. In a small bowl whisk the eggs and milk together and then add to the flour mixture. Mix with a wooden spoon until well combined. Pour mixture into a slice tray and then sprinkle with parmesan cheese. Cook in a moderate oven (160) for 20-25 mins. Remove from oven and allow to cool completely before slicing into squares!
