Green Eggs and Ham

If green eggs and ham don’t remind you of your child hood I don’t know what would. It was a classic book that every child seems to read at one point. Well today I decided to put my twist on the favourite… Well I guess it’s a bit of a stretch as the eggs aren’t actually green, but there is pesto involved so that’s enough by my standards haha.

I am a big lover of pesto, I am a huge lover of bacon and eggs in morning, but I am an even bigger lover of the grab and go (cause I am running late for work) breakfast. So this one ticks all the boxes!

Pesto Bacon and Egg Cups (Serves 4)

8 eggs

8 rashers of bacon

¼ cup pesto (get the recipe here)

 

Method

Prepare the bacon by removing the rind and meaty part of the bacon, all you need for this recipe is the long thin rasher, so reserve the remaining bacon for another time!

Wrap one piece of bacon around the inside edge a muffin whole in a muffin tray. And place any off cuts on the bottom of the muffin cup.  Repeat with remaining 7 pieces. Then place in a hot oven (200 degrees) for 5-7mins.

Remove from the oven and place 1tsp of pesto at the bottom of each cup, then crack an egg into each one. Return to the oven for 10mins or until yolk of egg is cooked to your liking (I love it runny!!).

Remove from oven and drizzle with remaining pesto, serve with crusty bread.

Or store in the fridge for a quick mid week snack or breaky!
