When I was younger we used to have pancakes as a treat on the weekend. They would be fluffy and oh so delicious every single time. But ever since I have been experimenting with gluten free flours I find it tricky to get a light fluffy texture. Until now that is... 

I created a delicious buckwheat pancake, with no added sugar (you get enough from the syrup on top I say!).

Pancakes

1 cup buckwheat flour

1tsp baking powder

1/2 cup yoghurt

1/2 cup milk

1/4 cup orange juice

1 egg

Method:

Combine buckwheat flour and baking powder in a bowl. In a separate bowl whisk the wet ingredients. Then combine the dry and wet ingredients until just combined. Heat a non stick pan, measure 1/4 cup mixture and pour it into the pan. Cook for 2mins then flip and cook for a remaining 1 min. Repeat with remaining mixture. Top pancakes with greek yoghurt, fresh orange segments and maple syrup!
