Jam Drops


Ingredients: 

1 cup wholemeal SR flour

1/2 cup coconut flour

2 eggs

1/2 tbsp baking powder

2 tbsp rice malt syrup

 2 tbsp coconut oil

1/3 cup Jam


Method:

In a bowl combine Wholemeal flour, coconut flour and baking powder. Then add in remaining ingredients except for the Jam and stir with a wooden spoon until combined and a fairly stiff dough forms. On lined baking

trays roll out 2 tsp of mixture into a small ball, ensuring to leave at least 2-3 cm between the balls as they will spread when cooking. Then with a slightly floured thumb make a small indent into the middle of the balls. Then spoon in 1/4 -1/2 tsp jam into each biscuit. Bake in a moderate oven for 15-20mins or until golden. It is best to let them cool slightly before removing from the tray.
