Honey and Apricot Baked Granola

1 cup rolled Oats*

1/2 cup almonds, roughly chopped

1/2 cup walnuts, roughly chopped

3/4 cup coconut flakes

2tbsp chia seeds

3/4 cup buckwheat groats

3tbsp pepitas

2 tbsp honey

1 tbsp coconut oil

1 tbsp tahini

3/4 cup dried apricots, roughly chopped

Method:

In a large bowl, combine oats, nuts, coconut, chia seeds, buckwheat and pepitas. In a small sauce pan, heat the honey and coconut oil until melted. Remove from the heat and mix in the tahini. Pour the honey mixture over the dry ingredients and use a wooden spoon to combine, ensuring everything is coated. 

Spread the mixture over a lined baking tray and place in a low oven (140C) for 15mins. Remove from oven and mix the granola to turn it over, then return to the oven for another 10mins or until golden. Remove from oven and allow to cool completely before mixing in roughly chopped apricots. 

* Omit oats to make it gluten free, instead add in extra nuts or buckwheat groats
