Crunchy Green Salad with Orange Mustard Vinaigrette

1 baby cos lettuce

2 handfuls baby spinach

2 oranges

2 tbsp almonds, roughly chopped

2tbsp orange juice

1 tbsp seeded mustard

1/3 cup olive oil



Wash the cos lettuce and then rip it into small pieces. Mix the lettuce with the salad in a large bowl. Segment the oranges and toss with the leaves then sprinkle with chopped almonds. 

To prepare the dressing add orange juice, mustard and olive oil into a small jar. Screw the lid on tight to ensure it doesn't leak. Then shake the jar to emulsify the dressing. Drizzle dressing over the salad.
