The Brisbane summer sure is getting to me this year. Without access to a pool or air conditioning (rookie error) I have been living off icy poles! These are my favourite, so only are they icy icy cold, but they have some of my favourite flavours - raspberry in the top and mango (along with some added greens in the base!) - but really the base fruit could be substituted for any of your favourites!

Fruity Icy Poles

1 cup frozen raspberries

1 cup watermelon

1  1/4cup coconut water

1/2 cup frozen mango

1/2 cup spinach

1 tbsp greek yoghurt

Method:

Blend the raspberries, watermelon and 1 cup coconut water until smooth. Pour in to icy pole moulds. Fill 2/3 of the way. Place wooden sticks into the moulds then freeze for 1 hours.

Blend the Mango, spinach, yoghurt and remaining coconut water. Then fill the icy pole moulds to the top. Cover moulds and freeze for a further 3 hrs. Then remove from freezer and enjoy!!
