I joined up with the Jamie Oliver team for this years food revolution campaign. This has to be one of my favourite recipes created for it thus far. I love when I get a new hit of inspiration and come up with a new idea - I may or may not have eaten this every morning since creating the recipe 1 weeks ago...oops?

Easy Oaty Pancakes

1/2 cup oats

1 tsp bi carb soda

1 egg

1/4 cup milk

1tbsp peanut butter

2 tsp honey

Berries or preferred fruit

1tsp cacao nibs (optional)

Method:

Place oats, bi carb, egg and milk in a blender. Blend on high for 30sec or until smooth. Then pour into a large greased frypan on low heat, the pancake should be about 15cm in diameter! Cook for 3mins or until bubbles start to form on the top side. Then carefully flip and cook for a further 2 mins. Remove from heat, spread with peanut butter, honey and sprinkle with berries and cacao nibs.
