I try to make a batch of granola every 2 weeks or so... Yoghurt granola and fruit is by far my favourite (quickest) breakfast! You think I would have come up with countless granola recipes by now. But I just can't seem to go past this flavour combination so I thought it was about time I post the recipe! (Ps. Sorry for the terrible quality photos... something happened in the transfer I will fix them asap!)

Cinnamon and Cranberry Granola

Ps. Use this recipe as a guide... you can sub any of the nuts and seeds for others. If you are gluten intolerant - replace the Oats with more Buckwheat groats, or use gluten free certified oats!

1.5 cup Oats

1 cup coconut flakes

3/4 cup roughly chopped almonds

1/2 cup buckwheat groats

3 tbsp chia seed

3 tbsp sesame seeds

1 tbsp coconut oil

1/4 cup maple syrup

2 tsp cinnamon, ground

1/3 cup roughly chopped dried cranberries

1/4 cup cacao nibs

Method:

Mix the oats, coconut, almonds, groats, chia, sesame in a bowl. Then mix through coconut oil, maple syrup and cinnamon until coated. Spread out on a large baking tray and place in the oven. Cook for 20mins at 160C. Make sure to stir the granola after 10 mins. Allow to cool completely then stir though cranberries and cacao nibs!
