Yes, I am a nutritionist and YES, I eat cake!! For me baking is not just about the food you eat at the end, but I find the process of baking so relaxing and get so much enjoyment from the joy of friends faces when they eat the end product! So I will you to make this cake, forget the fact that it has sugar in it, castor sugar, rice malt sugar are all still sugars after all. Instead bake this cake and enjoy it with those closest to you. The key to a healthy life is to eat mindfully and eat in moderation, and forget the restrictions on your diet.
When I was a little girl, this cake was one of the first things my mother taught me to make. Now into my 20's I still make it on a regular basis. It is bound to be a favourite among family and friends... and the best thing it is incredibly simple!
125g unsalted butter
1 cup castor sugar
1 tbsp cacao
1/2 cup milk
1 1/2 cup Self Raising Flour
1/2 cup Boiling water
1.5 cup icing sugar
1 tbsp cacao
1 tsp butter (softened)
2 tbsp milk
Preheat oven to 160C. Line and grease an 8inch round cake tin.
Cream Butter and Sugar until light and fluffy, add egg and beat well. Then add milk and sifted flour and cacao alternatively. Last add boiling water and pour into prepared tin. Cook in moderate oven for 20-25min or until cooked through.
Meanwhile prepare the icing. Mix the icing sugar, cacao and butter together. Add in one tbsp milk, then 1 tsp of milk until desired consistency is reached.
