These are my my absolute favourite treat on a hot summers day. Not only are they made with seasonal mango and blueberries for summer, they have the added benefit of chia seeds. Chia seeds are high in omega 3 and fibre, helping to keep you fuller for longer! Yes thats right, this seemly light snack, will help tide you over until dinner!

I make these on coconut water, not only for the flavour, but also for the extra boost of electrolytes. Keep hydrated in summer is vital, but that can be harder said than done. Coconut water, however is like natures energy drink. The electrolytes help the water absorb into the cells in your body. But, coconut water is high in natural sugars, so you make sure you don't over do it - plain old water is still my first choice for hydration!

Blueberry Mango Icy Poles (makes 6)

1 Punnet of Blueberries

1 cup of Mango Flesh - you can you fresh or frozen for this step!

6 tsp Chia seeds

600mL Coconut Water

Method:

Divide the blueberries and mango between 6 icy pole moulds. Then sprinkle 1 tsp of chia seeds into each mould. Finally top up with 100mL of  Coconut water (this may vary depending on the size of your moulds). Freeze for at least 4hrs or over night. Enjoy by the pool on a hot summers day!
